Our Solera Rye started as an experiment a few years back when we found ourselves with an excess of 5+ year rums from Trinidad, Venezuela, and Jamaica. After dumping the aged rum, we employed an under-appreciated old world aging technique: the Solera method. The rum casks were filled with our blend of MGP rye whiskeys, then mellowed for several months.
This time-honored and time-consuming process allowed the complimentary spice of the rye and fruit of the rums to blend to perfection — think Caribbean spice cake. Notes like allspice, clove, and cinnamon emerged alongside fresh pineapple skins, pressed apple cider, and sweetened pears.
